Every lunch and dinner at the dig house in Turkey has the standard cucumber tomato side dish. It&amp;#39;s equal parts diced cucumber and tomato with a little parsley, olive oil, lemon, and salt. It&amp;#39;s simple and light and good in hot weather. No culinary wowser but one of my favorites. First mistake was the mushrooms. Second, and more serious, error was to include capers. It was pretty gross, and to this day I avoid mixing rice and mushrooms.
