Roast Zucchini Soup with Stilton

roast a bunch of zucchini (and/or summer squash) until
done. toss in a large pot with a few chopped shallots, two 
potatoes, and some good chicken stock. simmer over low
heat for about an hour. allow to cool slightly, then puree
with a large chunk of good Stilton cheese until smooth.
season with salt and pepper and drizzle on a glug or two
of good olive oil. don't forget some bread as well.

This blog is starting to be more about promoting an idea of what to cook as opposed to promoting a particular recipe. Everything is done by feel and to taste. Use as many zucchini as you like. Roast them the way you would any vegetable. Add as little or as much Stilton as you desire. In other words: Make however suits your taste best!

Never considered Zucchini soup So I had to try it tonight. Yum! Used what we had in the kitchen. No potatoes, so I used cauliflower. No Stilton, so used a strong and bitey cheese. Fantastic! Thank you:-)
