
saute one shallot in butter.add milk, dill, one
tilapia fillet and some smoked fish. bring to a
simmer for ten minutes. meanwhile, boil some
salted water. steam one pound of spinach over
top until tender. add finely diced sweet potato
to the water. remove from heat and cover for 10
minutes. remove fish from liquid and place into
ramekins. make a small roux and add to milk. stir
until well combined. add dill, salt, and pepper. top
fish with spinach, then the sweet potato. ladle over
top with thickened milk and garnish with dill. serve.
